    Chablis Aged at the Domaine - Three Great Vintages

    Beautifully "domaine-aged" Chablis is pristine, punchy and beautiful and here we have a few great examples! The two big guns of Chablis Dauvissat and Raveneau keep increasing in price and there almost seems no ceiling; but there is no doubting the "iconic / benchmark" quality and greatness!

    "The fruit of old vines (1955) with little bunches, vinified and matured in stainless steel for a later bottling. This has benefitted from its longer elevage. This plot often delivers a slightly smoky character and I can see threads of this drifting in and out of the white fruit. He finds the style quite different, richer fruit but also smoky.      Benjamin Laroche La Manufacture 2014 Chablis Grand Cru Blanchot

    The chalky white soil of Blanchots has long been known to produce Chablis where the byword is elegance, as opposed to the overt lushness and power of a Les Preuses. Where others have tended to amp up the power of this climat through over-working their wines in the cellar, Benjamin Laroche worked closely with his growers to raise a full-bodied wine with that x-factor mineral depth and mouth-watering character. These wines have the inherent power and depth to match the seamless “2014” acidity that is keeping the wine fresh and will preserve it for years to come. - Randall

    "If the Côte de Bouguerots is the biggest wine in 2011 then the Preuses is arguably the most aromatically complex with a broad ranging nose of perfumed and ripe scents of oyster shell, sea water, citrus and white flowers. The silky and refined flavors are wonderfully seductive with an intense minerality to the austere, bone dry and balanced finish that exudes hints of saline and iodine.     "Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France's most celebrated vignerons—seemed just as delighted with his 2020s as he had been with his 2019s. Chiseled, concentrated and pungently mineral, there's no grower in the region who has done a better job of retaining all of Chablis's classical signatures in the warmer, sunnier vintages of the last decade. Once again, Dauvissat has produced some of the wines of the vintage, and they will be worth a special effort to seek out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau's Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling."

Medium to full-bodied, deep and multidimensional, it's taut and concentrated, with racy acids, chalky structuring and a long, searingly mineral finish.     "The 2018 Chablis 1er Cru La Forest is also showing well, opening in the glass with aromas of crisp green orchard fruit, citrus oil, beeswax, honeycomb and oyster shell. Medium to full-bodied, layered and textural, it's fleshy and enveloping, with a lovely spine of acidity and a long, saline finish.     "Pale, bright yellow. Pungent aromas of grapefruit pith, lemon zest and wild herbs; really amazing lift here for a vintage with moderate acidity. Seamless and fine-grained, already offering compelling inner-mouth perfume to its flavors of citrus fruits, wild herbs, acacia flower, jasmine and minerals. The wonderfully aromatic, slowly rising finish boasts outstanding floral lift. A great premier cru in the making.     The 2019 Chablis Les Clos Grand Cru is more strict and linear on the nose compared to Les Preuses , gradually developing some subtle grilled almond and walnut aromas. You just need about 30 seconds and you are lost in the aromas. The palate is exceptionally well balanced with a nigh perfect thread of acidity. This Les Clos displays ethereal poise from start to finish and is blessed with a pixelated quality that distinguishes it from any other. On the palate, it's full-bodied, satiny and multidimensional, with a rich, structured but incisive profile and a long, chalky finish.     "The 2015 Chablis Grand Cru les Clos seems to be the most closed of all the 2015s, even after two days of being open in bottle. It only reluctantly reveals oyster shell, quince, baking powder and flint scents. It is exquisitely defined. The palate is very well balanced with a lightly-honeyed opening, a keen thread of acidity and a subtle dash of spice that becomes more prominent towards the poised and elegant finish.     "Like many wines from this initially tight-knit vintage, the 2010 Chablis Grand Cru Les Clos from Vincent Dauvissat is drinking surprisingly well, unfurling in the glass with notes of honeycomb, lemon oil, wheat toast, mandarin and oystershell, framed by subtly smoky reduction that dissipates with aeration. On the palate, it's full-bodied, concentrated and multidimensional, with considerable mid-palate depth and dimension married with incredible crystalline purity and stony tension.
