His winemaking philosophy is a study in power with restraint and precision. In the cellar, he leans toward minimal intervention, with attentive observation and obsessive care, allowing each cuvée to speak of its origins. He has fermented all of the fruit as whole bunches (perhaps to fill the tank?). But there is no edge of green tannins, suggesting that he sorted particularly well.
