After the fermentation it's aged in a demi-muid and some old smaller barrels so there is no oak in the flavour profile. When it was younger I used to call it the \"Chambolle of the Vale\" because of its intense red-fruit \/ raspberry fruit, but now as it slowley ages there is a little more earth and sandalwood creaping in.
