Jasper Morris MW originally brought these to our attention and notes that Burrier crushes his fruit before pressing to give more texture and richness. He also judiciously used an old fashioned hydraulic press instead of a more modern pneumatic air-bag press for most of the wines. Frederic has trialled not crushing the fruit and using modern presses, but he prefers the textural complexity, phenolic richness and 'backbone' that his crushed chardonnay fruit method gives. He asserts that “you must start with perfectly ripened and healthy grapes.” The mashing\/crushing of the fruit gives the wines more phenolic flavours and fleshier \/ firmer textures with antioxidants and other benefits. Earl-grey tea, strawberries, pepper, rose and violets with gravely earth and firm tannins thanks to the rare “Gamay Nicolas” or “Fin”, with its small bunches and berries. These vines are over 100yo and the 0.6 La Salomine site sits at 400mt, facing south on sandy pink granite soil just on the border of Fleurie. It’s made from mostly crushed fruit and it’s aged in truncated cone shaped wood vats (the famous trunconics) for a year. It shows good vibrancy, and authentic lees ageing and slightly smoky barrel-ageing nuances (it's aged in 1\/2 350lt barrels and 1\/2 tank), struck rock limestone soil character and the Burrier generosity. with pear, white flowers (tea tree \/ manuka) and grapefruit flavours to name a few. This is a cellar selection of around ten casks with around half matured in new oak, twelve months in cask and then six in stainless steel. It is slightly paler in colour than the regular cuvée. This is very well defined on the nose with impressive intensity, the oak beautifully assimilated, very focused and delineated. The palate has wonderful balance, though the wood i again conspicuous at the moment and requires time to be absorbed. The 2023 has very good depth and real weight on the finish with a vivacious pepperiness that lingers on the aftertaste. Usually there are 65 barrels in total (which equates to less than 35 hl\/ha for the whole plot – less than most grand crus!), so this cuvée represents the best 5% of the grapes, and it’s given 100% new oak. I tasted a 2018 last week, and I’m very sad that I only have 5 bottles left, it’s a powerful but elegant wine, ageing nicely and it is still quite youthful! The palate is well balanced with a very subtle reduction on the entry. There is a keen line of acidity with a saline (verging on peppery) finish.
