Hubert Lignier is the epitome of top-class boutique Burgundy. With just 8.5 hectares of vines, the production is a family-run affair. But those 8.5 hectares hold some of the most coveted vines in Burgundy, with portions of many of the Côte de Nuits' most hallowed sites found in the mix. While the top-tier wines can run a pretty penny (and to collectors and cognoscenti, they're worth every penny), a fabulous introduction to the domaine is the Bourgogne Passetoutgrain. A blend of 60% Gamay and 40% Pinot Noir from the Morey lieu-dit "Aux Poirelots", this entry-level bargain displays finesse and refinement seldom, if ever, found in a Passetoutgrain. But the real mark of the Lignier style is depth, and this wine also shows that character in spades. The Passetoutgrain category (a blend of Gamay and Pinot Noir) is a wonderful little secret of Burgundy, and this is arguably the best example on the market.
