Hand-picked, destemmed and left on on contact with skns for more than 12 hours prior to gentle pressing; wild fermented in concrete and ceramic eggs (25%) before finishing with a 10-month snooze on lees. Owner and vigneron samantha Connew is very pleased with this eight iteration of the wine, describing its nose as a 'combination of wild fennel seed and bay leaf spice overlaid with some white blossom waxiness.'
