The Domaine de l’Aste Bourgogne is all from the Santenay commune, but on a cooler, more westerly slope, so in the warmer vintages of late the grapes from this plot have been maintaining acidity and freshness. It’s 100% hand-picked, barrel aged, and otherwise treated the same way as David’s 1er Crus.
