The fruit was handpicked and pressed directly into 20% new oak puncheons for a wild fermentation, followed by 10 months on the lees before bottling. There’s a gun flinty smokiness on the nose with fresh green apples, lemons and baked peaches. The palate is smooth, ripe and luscious with fresh and vibrant acidity.
