Crucially, as Allen Meadows notes, long-time régisseur Didier Séguier remains at the helm, ensuring continuity of style and uncompromising Chablis character.
For more than two decades the estate has been producing fresh, tensile wines that are resolutely classical in style. In 2023, that precision meets progress, with the domaine achieving official organic certification for the first time — a natural evolution of its meticulous vineyard work.
Given the exceptional 2023 vintage, it stands to reason that this could be on of the best Chablis AC releases from Fevre in a very long time.

Disgorged on the 5th December 2025 with thirteen years on yeast lees. A special release of a tiny quantity of Blancs de Blancs aged in our cellars. Bottled with zero dosage as per the original 2012 wine which was originally released in 2018 with 6 years on yeast lees.

'The original '12 Blanc de Blancs was released in '18 with six years on lees. This is the same wine but now with 13 years on yeast lees. Disgorged 5 December 2025 with zero dosage. A bright, deep green gold. Complex aromas of brioche, toasted nuts, honey and baked goods. The palate is dry and mouth-filling with grip and tension, while maintaining excellent balance and freshness. A serious food wine to drink now and over the next four to six years.'

Despite being the only Gembrook wine that is not estate sourced, the Village pinot noir has always held the classic charm of Gembrook. In the cellar the Upper Yarra fruit receives the same gentle treatment as the estate wines; destemmed, fermented on skins for several weeks, then aged in seasoned large-format French oak and bottled without fining or filtration. The 2025 is beautifully perfumed and has decent structural depth with soft but present tannins and excellent fruit intensity.

Delicious drinking. Lemon curd, lemongrass, lemon verbena with dashes of red apple, peach, vanilla and touches of flint with saline minerality. It’s got a nice haze to texture, a gentle and soft flow, a touch diffuse perhaps but refreshing anyways. Perfume rolls out with green apple, green mango, salted cashew and faint clove and herbal lift. Delightful. Everything just so. Good freshness too. Happy days. 93 points - Mike Bennie, The Wine Front
