    At Domaine Jean-Louis Chavy, the approach is defined by discretion. The cellar work is nearly invisible: whole-bunch pressing, wild fermentations, no bâtonnage, and restrained oak influence. With the move to 350-litre barrels, the wines have shed any gloss of wood in favour of greater delineation. What comes through most vividly is the story of Puligny’s soils. The wines are strikingly mineral, etched with saline energy focusing ample white and yellow orchard fruit.  Each premier cru is articulate in its own way: Folatières shows intensity and depth; Perrières, tight minerality and nerve; Champs-Gains, a lifted, floral wine; Clavoillons, breadth and somewhat generosity. The style is consistent: luminous aromatics, lively acidity, and impressive persistence. Vine age, often half a century or more, gives concentration to the fruit without heaviness. The domaine demonstrates how Puligny’s patchwork of sites can express themselves when technique is pared back. These are not showy wines, but they are truly rewarding and delicious.
