Estate wines made by the ubiquitous Frederic Burrier are either classified organic or in conversion. Jasper Morris MW originally brought these to our attention and notes that Burrier crushes his fruit before pressing to give more texture and richness. He also judiciously uses an old fashioned hydraulic press instead of a more modern pneumatic air-bag press for most of the wines. Frederic has trialled not crushing the fruit and using modern presses, but he prefers the textural complexity, phenolic richness and 'backbone' that his crushed chardonnay fruit method gives. He asserts that “you must start with perfectly ripened and healthy grapes.” The mashing/crushing of the fruit gives the wines more phenolic flavours and fleshier / firmer textures with antioxidants and other benefits. The 1er Cru AOC came into play with the 2020 vintage, and it’s been seemingly exponential growth in quality with each passing vintage. Cheers, Randall.

'This is riper still while displaying even more sauvage character on the dark berry fruit and just turned earth-suffused nose. The rich, supple and utterly delicious medium-bodied flavors also pack excellent punch on the powerful and succulent finish. 'Vaslin pressed, then fermented in 350 litre barrels which the Burriers buy second hand from a grower in Chassagne-Montrachet. Full yellow with a green tint. The grapes are not in fact Aligoté doré because Frédéric wants the greener touch. A little spice on the nose. Middleweight fruit, slightly lacks the concentration through the middle, though with a pleasing finish.'

I like both the texture and the energy of the delicious and fleshy middle weight flavors that conclude in a refreshing, clean, dry and lemon-tinged finish. 'The soil is a downwash of clay on marl, very similar to Les Reisses (see Château de Beauregard). A glowing lively yellow colour. No feeling of the south here, yet increased density on the nose. The balance of everything, power, class, restraint. White fruit with a little inflection of yellow. Strongly marl influenced. The natural acidity is more of minerality here without taking on iodine character. Brilliantly persistent.' An outstanding wine in its category. This accolade will be given very rarely, certainly to less than 10% of wines tasted across the year. '[..] This is a cellar selection of around ten casks with around half matured in new oak, twelve months in cask and then six in stainless steel. It i slightly paler in colour than the regular cuvée. This is very well defined on the nose with impressive intensity, the oak beautifully assimilated, very focused and delineated. The palate has wonderful balance, though the wood is again conspicuous at the moment and requires time to be absorbed.
