    NV Delamotte Brut

    Its location is one of Delamotte’s richest assets. The chalky soil, the flora and the sloping vineyards give the grapes their exceptional character, delivering delicate, consistent champagnes. Comprised of 60% Chardonnay,  35% Pinot Noir from Tours-sur-Marne, Bouzy and Ambonnay and 5% Pinot Meunier. This wine has matured for 36 months on lees, with a base wine from 2018 with 20% reserve wines from 2017 and 2016.

    Made from Grand Cru Chardonnay, Delamotte Blanc de Blancs exhibits absolute purity, with the vinification process taking place in stainless steel tanks. Blanc de Blancs is a mineral champagne with purity of expression and complexity from extended lees ageing.

    2019 Dominique Gruhier Cremant de Bourgogne Extra Brut

    This tastes better than 100's of champagnes! It is astonishingly great: dense, rich, elegant, dry, tangy, and with a persistent creamy moose. It's is a chardonnay and pinot noir blend, 100% barrel fermented and aged for 8 months in old oak (400 and 600 lt barrels) then given traditional bottle fermentation and ageing for 30 months. 
    The flavour and colour suggests chardonnay is the dominant player here. White fleshy fruits sit behind a marine-inflections and a wealth of yeast autolysis richness. This wine is not just geographically but also stylistically situated halfway between Chablis & Champagne. The palate is all finesse, and the 4 g/L dosage rounds out the mouthwatering acidity and chalky minerality. Not your average Cremant de Bourgogne!

Pale straw with elegant white peach, grapefruit and green apple with underlying hints of crushed stone, almond blossom, brioche, enoki mushroom broth and a gentle wisp of freshly cut fennel bulb.      2020 Bellebonne Vintage Rose

    "Pipers River pinot noir from four rows of vines, fermented in eight-year-old barrels with 100% mlf. Early picked for the aromatic purity it provides, and it really shows. A beautiful salmon hue with a fine energetic bead and mousse, stunning aromatics of redcurrant, wild strawberries, red apple and raspberry with notes of mushroom broth, fresh pastry, crushed river stone and light creamy notes.     2016 Bellebonne Vintage Blanc de Blancs

    "100% chardonnay from a single vineyard in Pipers River. Fermented in four 8-20yo barrels, full mlf and aged 5.5 years on lees; 4.1g/L dosage. Pipers River chardonnay has a personality all of its own, contrasting the tension of cold winds whipping across from Bass Strait, with a generosity of fruit and body. Natalie Fryar plays the creamy texture of barrel fermentation and lees age to seamlessly marry the two. Pineapple, fig and grapefruit meet the subtle beginnings of brioche and vanilla nougat.
