This is super tight and deeply concentrated. It has struck-rock mineral and savoury reduction some real Corton Charlamange-like minerality and structure. After a very quick settling the juice (still with a high “baub” (suspended lees) content is allowed to start fermenting naturally in tank, then quickly transferred to 350lt barrels, 20% new. This is classy, fairly tightly coiled but morish and mouth-watering. A 2013 of this was opened and it showed well. Great proof that this can age well also. Randall
