A 76/12/8/4 blend of Cabernet Sauvignon, Shiraz, Merlot and Petit Verdot from the single-site estate vineyard, in Pokolbin, Lower Hunter Valley. Low-cropping vines that are a combination of volcanic hill, with a south-easterly aspect. The soil is heavy red clay, with limestone beneath. Vines are pruned heavily for low production, high-quality fruit and trellised with vertical shoot positioning. Elevation: 50-100m. The grapes are hand-picked early in the morning, crushed into open fermenters then gently hand-plunged every 6 hours for a week before transfer to old (French oak) casks for natural settling. In the spring it is transferred to small French oak barriques (225-litre) for a year before bottling.
The 2021 Hunter Valley vintage saw the end of a three-year drought period (El Niño) that, although resulting in smaller volumes, delivered a run of excellent vintages. Our vineyard yields bounced back for 2021, and the Cabernets blend is layered and balanced; a beautiful wine. True to the Folly style, displaying elegance and finesse.
Lifted blueberry, raspberry and fresh cherry aromas with hints of liquorice and black pepper that carry over to the palate. This vintage was made in its traditional way of crushing the fruit, then into open vats for fermentation and hand-plunging. We did 15% whole-bunch fermentation, which gives this wine an added layer. A medium-bodied style, it is classy and nicely balanced, with a lovely tannin-to-fruit-sweetness ratio, resulting in a textural, stylish wine, that will have outstanding longevity.
