This is amazing with ripe, red raspberry fruit and liqueur-like richness - like a Chambole on steriods with sweet fruit, graphite minerality and good svelt tannins. It's a blend of several plots in Canalejas de Peñafiel, centred on La Cabaña (north-facing, typically latest harvested) and El Olmar (among the first).
Hand-destemmed fruit with 35% stem inclusion. A portion was made in Clarete style and basket-pressed to moderate tannin and enhance freshness; the rest pressed after 15 days on skins. Aged 24 months in 500L François Frères puncheons, with a single racking. Named for the local nickname "Castaños," the wine pays tribute to the people of Canalejas and evokes a ripe, structured elegance.
