The new state of the art and environmentally credible Amiot-Servelle cellar is based in Chambolle-Musigny, accross the road fromm the great site of Les Cras and adjacent to Derriere la Grange. It's been designed to optomise the ease of the best winemaking practices (eg. cool-rooms for grapes next to the crusher pad, gravity flow optomisation, clean and "easy to clean" floors and surfaces and a relatively spacious work area. Advanced heating / cooling and insulation properties and water collection and saving initiatives also are commendable.
Sister-brother team Prune and Antoine believe that the organics (started in 2003) are now really paying dividends in quality, perfect ripeness at slightly lower alcohols and more even ripening with improved, more complex and deeper flavours. Simply put, the domaine is on a roll, turning out beautifully crafted, natural and pure, highly perfumed deep reds. These wines are classic examples of their appellations (mostly Chambolle), but as a general style, they are generous, concentrated and plush. Yes, the tannins are there, but they are coated with fleshy ripe fruit that tastes like it comes from low-yielding vines. In fact, the vines have impressive maturity and are cared for like a retiree's rose garden! The results show more red fruit/rose petal perfume and "purity” than most Burgundies. I tasted a 1er Cru Charmes 2019 and 2016 recently and they both were super-impressive and punched way above their weight!
