The traditional Jura blend. Savagnin is fermented in vat and aged in barrel under flor for up to one year whereas the Chardonnay is fermented and aged in barrel and topped off (ouillé). The two are blended a year after harvest. The two grapes marry beautifully with the more exotic and forward fruit of the Chardonnay seasoned up a bit with the Savagnin spice, rusticity and texture.
