En Remilly sits at the very top of Saint-Aubin’s hierarchy. Positioned across a steep, south-facing slope that continues the natural line of Le Montrachet, the vineyard shares both aspect and geological severity with its grander neighbour. The surface is little more than fractured stone and gravel, forcing the vine deep and lending the wine its signature tension. What emerges is a white of remarkable precision and structure with lifted florals, citrus peel and a distinctly flinty, saline edge. This is Saint-Aubin at its most articulate. Jane Semple
